Hainanese Chicken Rice Ginger Sauce

MAKES ½ CUP
30g ginger, peeled
1 red chilli, halved
2 limes, juice only
40g raw sugar
Salt, to taste
1 tsp sesame oil
- Place ginger and chilli in TM bowl, chop for 3 seconds, speed 7.
- Add lime juice, sugar, salt and sesame oil, mix for 4 seconds, speed 3.
Serve with Hainanese chicken rice (page 152) or as a dipping sauce for spring rolls, dumplings and vegetables.
