Thermomix Chickpea & Chorizo Stew Recipe

This free recipe is from the winter section of our cookbook Quick Fix: Every Occasion – a deliciously warming chickpea and chorizo stew, perfect for chilly-weather eating. It’s incredibly easy to make with inexpensive ingredients, and be made on the table in 30 minutes, so it’s great for weeknight dinners. This stew is both dairy and gluten free, making it super healthy to boot. We’re sure it’ll be a hit with your whole household!

Serves 4

Ingredients

1 brown onion, peeled and halved
4 garlic cloves, peeled
2 chorizo sausages, sliced
20g olive oil
3 celery sticks, thinly sliced
1 red capsicum, thinly sliced
800g can diced tomatoes
2 tsp harissa paste (Quick Fix: Every Occasion p. 153 or purchased)
1 tbsp stock concentrate
1 tbsp tomato paste
Salt, to taste
400g can chickpeas, drained
50g baby spinach
Handful flat leaf parsley, leaves only

Method

  1. Place onion and garlic in TM bowl, chop for 5 seconds, speed 5.
  2. Add chorizo and oil, sauté for 8 minutes, 100°C, speed 1.
  3. Add celery, capsicum, diced tomatoes, harissa paste, stock concentrate, tomato paste and salt. Cook for 17 minutes, Varoma steaming temperature, reverse speed soft, MC removed and steamer basket on top to prevent splashes.
  4. Add chickpeas, spinach and parsley, continue cooking for 3 minutes, Varoma steaming temperature, reverse speed soft, MC removed and steamer basket on top.

Serve with cheat’s sourdough (Quick Fix: Every Occasion p. 55) or creamy polenta (Quick Fix: Every Occasion p. 67).

Variation: For a spicy option, add one small chilli at step 1. For a gluten free option, ensure that the chorizo is labelled gluten free.
