Thermomix Sticky Date Puddings Recipe

Such a classic dessert, made so easy in the Thermomix! Whip up the batter in the thermie bowl, pour into our non-stick silicone dariole moulds and then steam in the Thermomix Varoma. Delicious served hot or cold, it’s hard to find someone who doesn’t love a sticky date pudding! We’ve kept the eggs, dairy and nuts (optional) out of the recipe so it’s suitable for a range of eating preferences, lunchboxes etc, but honestly there’s no loss of quality so it’s always my go-to recipe regardless (and I’ve always got all the ingredients in the pantry which really helps!).

Our silicone dariole moulds are essential for these cute individual serves, but alternatively you can steam the entire mixture in our 1L non-stick pudding steamer for one large pudding. If using dariole moulds, our steaming mat is perfect for covering these and preventing the condensation dripping in (just another one of it’s brilliant uses!).

Ingredients

15g flaxseeds
250g dates
225g water
1 tsp bicarb soda
135g plain flour
2 tsp baking powder
35g macadamia or olive oil + extra for greasing
1 tsp mixed spice
90g brown sugar

Method

  1. Place flaxseeds in TC bowl, mill for 10 seconds, speed 10. Scrape down sides.
  2. Add dates and water, cook for 4 minutes, 100C, speed 1.
  3. Add bicarb soda, chop for 4 seconds, speed 4. Wait for 5 minutes.
  4. Add flour, baking powder, oil, mixed spice and brown sugar. Mix for 5 seconds, speed 3. Fold in any loose flour using silicone thermo spatula.
  5. Grease 8 x silicone dariole moulds (one set!) with oil using a pastry brush. Divide date mixture evenly between the eight moulds. Bang moulds on the benchtop to release any air bubbles and flatten mixture.
  6. Fill TC bowl with 700g water. Place steaming tray in position and fill with dariole moulds. Take your Varoma steaming mat and turn it upside down, then use to cover the dariole moulds, laying it over the top (see video above if this isn’t clear!). We are wanting to prevent condensation dripping into our puddings. Place steaming tray lid in position.
  7. Steam for 30 minutes, steaming temperature. speed 3.
  8. Wait 10 minutes, then invert dariole moulds over serving plates or container. Gently squeeze the sides of the moulds to release the puddings.

For a warm sticky date pudding serve immediately, or place in an airtight container and store in the fridge for up to five days. Just as delicious served cold.
