Thermomix Easiest Fakeaway Noodles Recipe

This dish is a super-easy one perfect for those nights you really can’t be bothered cooking - that’s how easy it is! And the washing up couldn’t be more minimal (big plus for me). And frankly, it tastes exactly like the boxes of noodles commonly bought as takeaway… but without the price tag and crappy ingredients. Use whatever veggies you’ve got in the fridge, making this recipe not only easy, but frugal and waste free (plus you’re tailoring it to the veggies you like, not necessarily the ones I like!). You can also add cubed tofu, fish, prawns or really thinly sliced beef (rump steak would be my suggestion).

This recipe has been written to serve one, but can easily be scaled up to serve two (just double the ingredients, keep the method the same). For everyone out there cooking for one, I see you! And I think you’re going to love this recipe - no half cans leftover etc. Just tasty bowl food ready in less than 20 minutes. Here’s a quick video showing you just how easy it is!

Serves 1

Ingredients

200g packet fresh udon noodles (not dried)
1.5 cups chopped veggies - carrot, mushrooms, greens, broccoli, snow peas, capsicum, spring onions
75g hoisin sauce*
10g toasted sesame oil or olive oil
1 tsp Korean red pepper flakes (optional)
1/2 tsp flavour bomb salt (optional)
Toppings - sesame seeds, fried shallots, roasted peanuts, pickles, fresh mint, coriander

Method

  1. Fill TC bowl with 500ml water. Place lid on, and top with steaming tray / Varoma. Position steaming mat on upper steaming tray. Top with noodles, veggies, hoisin sauce, sesame oil and red pepper flakes (if using). Cover with steaming / Varoma lid. Make sure to watch the above video if you haven’t already - it’ll show you exactly how we do it!
  2. Steam for 15 minutes, steaming (Varoma) temperature, speed 4. Use tongs to toss together all ingredients and ensure hoisin sauce is evenly distributed.

Top with flavour bomb salt (which makes everything taste better!) and toppings and enjoy! And you’ve only got your Steaming Mat and chopping board to wash up - your Thermomix machine and Varoma simply need drying. It really couldn’t be easier!
