Zucchinis are one of the easiest vegetables to grow – so easy, in fact, that you can easily end up with too many! This recipe came to the rescue when we found ourselves harvesting 12 kilograms in just one week. If you can’t grow your own, zucchinis are cheap and plentiful at the height of summer so look out for them at your local grocer. Make a few batches of soup at a time and freeze, then simply defrost, blend and reheat all at once in the thermo cooker for a quick fix meal full of nutrients.
