This recipe seems a little weird... but I promise it works out, and boy is it tasty! No need to precook anything – simply throw the dry pasta in the casserole dish and it cooks itself while in the oven and also soaks up all the moisture from the zucchini, meaning not a chance of a soggy slice (and no need to bother pressing and draining the zucchini first). I always say – if there’s a way to make cooking quicker and easier (while still staying true to real ingredients), I’m all over it.

Mint, Basil or Parsley
Red shallots, peeled
Zucchini
Full-fat milk
Free-range eggs
Extra-virgin olive oil
Plain flour
Fine salt or Flavour bomb salt

Frozen corn kernels
