Not entirely sure if satay laksa is a thing, but I’m making it one! Spicy and warming coconut broth with a hearty dose of peanut butter, giving a rich and flavoursome satay feel. We’ve then got udon noodles that we’re cooking in the slow cooker along with everything else, allowing the noodles to soak up all the delicious flavours and meaning we’ve got one less pot to worry about and wash up – double win! This is one seriously delicious dinner.
