Stock concentrate is a staple in most savoury thermo cooker recipes, and for good reason – the salt lifts all the flavours in the dish and the herbs and vegetables add extra seasoning. Use it wherever you would usually use salt, a stock cube or liquid stock. Add a tablespoon to pasta sauces, soups, risottos, gravies, curries or stews. But you don’t need a recipe! And you certainly don’t need to shop for the ingredients. This is the ultimate ‘clean out the veggie drawer’ guide – simply use whatever odds and ends are left in the fridge. Think of the times you’ve bought a bunch of spring onions and only used a couple, a bunch of herbs and only used a few sprigs, or a kilo of pumpkin but only needed 800 grams. Or when you’ve bought a punnet of tomatoes for a salad, but never got around to making it; the tomatoes might not be looking their freshest for a salad but they will be perfectly fine blended and cooked into a stock concentrate.

Vegetables, Use a variety (Carrots, Celery, Pumpkin, Zucchini, Capsicum,
Sweet potato, Rocket, Spinach, Lettuce, Spring onions, Tomatoes,
Cabbage, Broccoli (stalks), Asparagus (woody ends))
Onion, peeled and halved (Red onion, White onion, Brown onion,
Golden or Red Asian Shallot, Leek)
Garlic cloves, peeled
Fresh herbs, Use a variety (Basil, Parsley, Mint, Coriander,
Rosemary, Thyme, Dill, Marjoram)
Coarse salt
Olive oil
