These healthy helpers taste fantastic, and are totally raw, vegetarian, gluten and dairy-free. Best of all, they utilise leftovers when you make our almond mylk from our Thermomix cookbook miniseries: super healthy — just throw the remaining almond pulp in the TM with some other pantry staples, get rolling and you’re done!

Ingredients
100g raw cashews
200g Medjool dates
50g coconut oil
65g honey
100g cacao powder
50g desiccated coconut
1 batch almond pulp (from miniseries: super healthy almond mylk recipe)
Pinch salt
Extra desiccated coconut, to coat
Method
- Place cashews in TM bowl, chop for 10 seconds, speed 9. Scrape down sides.
- Add dates, chop for 6 seconds, speed 7.
- Add coconut oil and honey, heat for 2 minutes, 37°C, speed 3.
- Add remaining ingredients, mix for 30 seconds, speed 3, or until well combined. Form into balls and roll in coconut.
Refrigerate truffles until ready to serve.
