A completely foolproof omelette that steams to perfection on your mat, with barely any washing up.
This foolproof steamed omelette is made in the Thermomix in about 25 minutes with just five ingredients, and the recipe serves 2.
After years of cooking in the Thermomix, I always felt the Varoma could do more than plain steaming, especially for dishes with sauces, marinades and eggs. This omelette is one of the recipes that proves it: the eggs and veggies steam together into omelette perfection, it's completely foolproof, and it's got me using my machine even more (which I didn't think was possible!).

The Best Omelette (for Thermomix)
Serves 2 (3 on the TM7 mat) · Thermomix or thermo cooker · about 25 minutes
Cooking on the larger TM7 mat? You don't have to size up: make it exactly as written for 2 serves (same time), or use the amber amounts (every ingredient increased by half) for 3 generous serves, adding 2 minutes to the steaming time (15 min total). The method otherwise stays exactly the same.

Method
Fill TC bowl with 500ml water. Place the lid on and top with the steaming tray / Varoma. Position the Silicone Steaming Mat on the upper steaming tray. Spread the veggies out evenly across the Mat.
In a small bowl or jug, roughly whisk together the eggs, salt and cream/milk/water (a fork is fine). Pour over the vegetables and sprinkle with the grated cheese.
Steam 13 min / Varoma / speed 4 (TM7: use steaming function; 15 min if making 3 serves).
To serve
Lovely on a crusty slice of homemade sourdough. For a version that tastes like it's got bacon in it, without the meat fat or nitrates, finish with a sprinkle of extra no-bacon bacon salt. You've only got the Steaming Mat and a small jug to wash; the machine and Varoma just need drying.

This omelette is happy with almost any quick-cooking veg you have on hand. Chopped broccolini and kale are our go-to, but baby spinach and broccoli work beautifully too. Already-roasted vegetables such as potato or pumpkin are a lovely way to use up leftovers, and if you're adding tomatoes, cherry tomatoes hold their shape far better than full-sized ones. Sun-dried tomatoes are delicious in here as well.
