Thermomix Salmon Pasta W. Peppery Radish Microgreens Recipe

This recipe looks very fancy and professional, but actually couldn’t be simpler to make! With a full-of-flavour garlic and lemon base, sweet cherry tomatoes, rich smoked salmon and fresh and peppery radish microgreens… it really is a match made in heaven. Make this one next time you’re entertaining - especially in the warmer months! Microgreens are simply immature veg… the little sprouts that will eventually grow into the proper veggie or herb. They’re available from speciality food shops and grocers - I get mine from the South Melbourne Market. While they’re not an ‘every day’ ingredient, they are brilliant when wanting something a little special - not only are they beautiful, they contain all flavour of the final veg in a mighty little packet. In this case, peppery radish! You can of course grow your own microgreens.. .simply sow the seeds very close together, and when the seedling is about 10cm tall snip it off. You’ve got yourself a microgreen! Popular with basil, parsley, snow peas and broccoli as well as different varieties of radish. You can see in the photos above we’ve got a deep purple radish spout as well as a fresh green colour.

Serves 4

Ingredients

300g spaghetti
1 lemon, rind and juice
2 garlic cloves, peeled
60g extra-virgin olive oil
Salt, to taste
250g cherry tomatoes, halved
200g smoked salmon, roughly chopped
1 pot radish microgreens, trimmed

Method

  1. Cook spaghetti in boiling water, according to package directions.
  2. Meanwhile, place lemon rind in TM bowl, zest for 10 seconds, speed 9. Scrape down sides.
  3. Add garlic, chop for 10 seconds, speed 8.
  4. Add oil, sauté for 6 minutes, 100°C, speed 1.
  5. Add cooked pasta, salt and lemon juice, mix for 30 seconds, reverse speed 1.

Transfer to a large serving bowl and toss through tomatoes, salmon and microgreens. Pretty as a picture and full of flavour!
