Free-Form Summer Fruit Tart in the Thermomix

Stunning in all its simplicity, this tart highlights the beautiful summer stone fruit with nothing more than fruit and a touch of jam in the filling. The pastry itself is a work of genius created by my mum, Janene, and has the perfect shortcrust texture while being dairy free, refined-sugar free and wheat free. This is dessert so healthy you really could eat it for breakfast!

Ingredients

Raw almonds
Maple syrup
Coconut oil
Wholemeal spelt flour
Quinoa flour
Baking powder
Salt
Rosewater
Jam
Ripe stone fruit, each cut into segments
– Apricots, Peaches, Nectarines, Plums
Raw sugar, to garnish
