Toasted coriander seeds
Toasted cumin seeds
White peppercorns
Fine salt
Lime, rind and juice
Long green chillies
Red Asian shallots, peeled and halved
Garlic cloves, peeled
Galangal, peeled
Lemongrass stalk, white part only
Coriander roots with stems and leaves
Coconut oil
