This corn and bacon dip takes under 10 minutes in the Thermomix and just 6 ingredients. No-Bacon Bacon Salt gives it all that smoky bacon flavour, with no bacon at all. It makes 2 cups, enough for 6 as a snack.
Snacks. There's a never-ending need for them, whether it's kids after school or me at my desk mid-afternoon. And good snacks, the healthy kind with a short ingredient list that you can whip up quickly, are few and far between. Especially on the savoury side.
Dips are my answer. They're savoury, you can make them ahead, and with a good cracker or a handful of veggie sticks they're the perfect finger food. Supermarket dips, on the other hand, are overpriced, often lacking in flavour, and full of ingredients I'd rather not be eating. This recipe ticks every box for something I need in my life right now, and I have a feeling you might need it too.
Corn and bacon is one of those fundamental, delicious combinations. But putting real bacon in a dip comes with a few downsides. There's cooking it and dealing with the fat spattering all over the stove, which I'm very happy to avoid. Then there's everything else: the health concerns, the animal ethics of eating pork, or simply the calories. Whichever of those speaks to you, this dip has you covered. It's vegetarian, with none of the nitrates that come with cured pork. It's much lighter than if we'd used bacon to get the same flavour. And it's quicker and easier to make.
The secret is my No-Bacon Bacon Salt. Honestly, this dip tastes like it has bacon fat through it, and it absolutely does not. I know lots of you will ask how to make it without the bacon salt, and the honest answer is you can't. So much crafting goes into that blend that it just can't be replicated. Instead you simply add 2 teaspoons, with zero effort, and all that flavour is there. That's all you need for the whole dip, so one bag goes a long way.
It's also a seasoning I feel really good about. It's made from real ingredients you'd recognise from your own pantry, including organic coconut sugar, organic tamari and organic sweet paprika. It's uncomplicated, so much so that Mum and I make it ourselves, by hand, in small batches. Commercially, you couldn't make it the way we do without adding inputs I refuse to add.
I'm convinced that once you've tried it and seen how easy it is, you'll be sold. It really will become a staple in your house. It might just be my favourite flavour at the moment, and this dip is so more-ish. Best of all, I feel really good about eating it.
And it's not just a snack. This dip is so good on anything Mexican. We made nachos the other night and used it on top instead of sour cream, and it was amazing. Next up, I want to try it in a burrito, just like the creamy sauce you often get at restaurants.

Corn and Bacon Dip, Without the Bacon (for Thermomix)

Place corn kernels and olive oil in TC bowl. Cook 8 min/100°C/reverse/speed 1. Transfer to a bowl and set aside.
Place cream cheese, yoghurt and No-Bacon Bacon Salt in TC bowl. Mix 15 sec/speed 6. Scrape down the sides of the bowl (this is easiest with a Thermo Spoon Spatula).
Mix 30 sec/speed 4. Scrape down sides.
Add corn and spring onions. Mix 10 sec/reverse/speed 3.
Chill for 20-30 minutes to thicken and set the dip, then taste and add more No-Bacon Bacon Salt if needed.
To finish
Spoon the dip into your favourite serving bowl and finish with an extra sprinkle of No-Bacon Bacon Salt for that smoky hit right on top. Set it out with corn chips, crackers or crunchy vegetable sticks and watch it disappear. It makes a brilliant lunchbox snack too. And if you're putting on a Mexican feast, don't stop at dipping: spoon it over nachos, or dollop it into burritos and tacos. Amazing.
Notes and tips
Vegan option: swap the cream cheese for a coconut-based vegan cream cheese, and the Greek yoghurt for coconut yoghurt. The No-Bacon Bacon Salt is already vegan.
Allergens: No-Bacon Bacon Salt contains soy. It's made in a facility that also processes sesame, soy, tree nuts, dairy and gluten.

Can I use frozen corn in this recipe?
Yes. Use about 250g frozen corn kernels in place of the 2 cobs, and increase the cooking time in step 1 to 12 min/100°C/reverse/speed 1 to allow for the corn being frozen.
Can I make this dip without the No-Bacon Bacon Salt?
Honestly, no. So much crafting goes into that blend that its flavour can't be replicated without it. The good news is you only need 2 teaspoons for the whole dip, so one bag goes a long way.
Is this corn and bacon dip vegetarian?
Yes. All the bacon flavour comes from No-Bacon Bacon Salt, so there's no meat in it at all.
Can I make it vegan?

Yes. You can make it up to 3 days in advance, and it will happily sit in the fridge. It needs 20-30 minutes chilling to thicken and set anyway, so it's made for making ahead.
