While I was pretty chuffed with my modern mulled wine made with rosé or white wine (page 153), I just couldn’t not include the classic version. Full-bodied, rich and heavily spiced, there’s nothing better on a cold evening or around an open fire. As always with mulled wine, don’t use your best bottle – save that for enjoying as is. Something cheap and cheery will do! This recipe can of course be doubled or even tripled – scale up the ingredients and follow the same steps.
