I'd been seeing a version of this delicious dumpling salad all over my Instagram feed, and every time I thought "I could make that so easily using my Silicone Steaming Mat for the Varoma." Got the larger TM7 mat? It fits more dumplings, so use the amber amounts (everything increased by half) for a bigger batch. The method and times stay the same.

Ingredients

* For a gluten-free option, look for gluten-free dumplings (they're readily available). For a vegetarian and vegan option, omit the fish sauce and use vegetable dumplings.

** I prep all the veg in a couple of minutes with our WunderSlicer Thermo Cutter: the thick slicing blade for the cabbage and spring onions, and the larger grating disk for the carrot.

Method

Place the chilli, garlic and ginger in TC bowl, chop 5 sec / speed 6.

Add the sesame oil, kecap manis, lime juice and fish sauce (if using). Mix 10 sec / speed 6.

Position the Silicone Steaming Mat on the upper Varoma steaming tray. Top with as many dumplings as will fit. Pour over the garlic and ginger sauce from the TC bowl.

Without cleaning the TC bowl, add 1L water. Place the Varoma steaming tray on top. Steam 20 min / steaming temperature / speed 3.

In a large mixing bowl, place the carrot, red cabbage, spring onions and sesame seeds. Tip over the entire contents of the steaming mat, dumplings and sauce. Toss everything together and serve.

To serve

Toss everything together while the dumplings are still warm and serve straight away, so the salad stays fresh and crunchy against the saucy dumplings. High five for a delicious, nourishing meal with barely any washing up.
