A simple savoury pancake with so much potential – make to serve with my Peking ‘Duck’ (p. 96) or fill with Flavourful Mushroom Mix (p. 77), stir-fried veggies, marinated tofu or tempeh strips, pickled vegetables, roasted eggplant, or whatever is in your fridge that needs using up. Inspired by our Waste-Not Baos (recipe in Everyday Thermo Cooking*), this recipe can be your waste-not pancakes as anything wrapped in this chewy goodness just works. Pair with any condiment, but my favourites are Sweet Chilli Hot Sauce (p. 162) and Healthy Hoisin (recipe also in Everyday Thermo Cooking – pictured).
