A plant-based gnocchi recipe... and of course it’s a gnoch-out! I’ll admit creating an foolproof egg-free gnocchi recipe wasn’t easy, but I persisted, and I’m so glad I did. The secret is in the potatoes – even though these varieties aren’t the easiest to source it’s well worth hunting them down. Serve with Go-To Tomato Pasta Sauce (p. 174) or simply with salt, olive oil and Cheesy Sprinkle (p. 151).
