A jewel-bright blood orange cordial that balances sweet and sour with just a whisper of bitterness, made the easy way with your Thermomix.

Winter is peak blood orange season here in Australia, and the secret to bottling all that fleeting crimson flavour is fresh juice, pressed in seconds with my Thermo Citrus Juicer.

This blood orange cordial is made in the Thermomix in about 15 minutes, and the recipe makes 500ml of jewel-bright cordial.

Blood oranges are one of those special ingredients that only come around for a few short weeks each winter. Slice one open and you are greeted with that unmistakable deep crimson flesh, sweeter and more rounded than an ordinary orange, with gentle notes of raspberry and a refreshing bitter edge. They are fleeting, so I like to make the most of them while they are here, and a homemade cordial is one of the loveliest ways to do it.

This cordial captures everything I love about the fruit: sweet, sour and beautifully balanced, a little like a Sanpellegrino Aranciata Rossa but fresher and entirely your own. Dilute it with chilled water or soda for the prettiest winter refresher, or save it for something a little more grown-up (more on that below).

The one job that can slow this recipe down is juicing a whole kilo of oranges, and that is exactly where my Thermo Citrus Juicer earns its place. Method

Place orange zest and sugar in the TM bowl. Mill 30 sec / speed 9.

If you have my Thermo Citrus Juicer, insert the axis shaft into the TM bowl (it is fine to leave your orange zest and sugar in the bottom of the bowl). Insert the citrus juicer on top of the Thermomix lid, then juice in your 1kg of blood oranges and the lemon. Remove the juicer and axis and continue with the recipe. If you do not have a Thermo Citrus Juicer, juice your oranges and lemon by hand and add into the Thermomix bowl here.

Heat 6 min / 70°C / speed 3. Strain through a fine sieve and store in the refrigerator until ready to serve.

To serve

Mix 1 part cordial to 6 parts chilled water or soda water, or to taste, and pour over plenty of ice.

Make it a cocktail
