These super-healthy burger buns are made in the Thermomix and baked for 45 to 50 minutes, and the recipe makes 5 grain-free, gluten-free rolls that are also dairy free, egg free, nut free, soy free and keto friendly.

These burger buns are both delicious and nutritious, and no matter what eating regime you are following, they tick all the boxes. Gluten free, grain free, dairy free, egg free, soy free, nut free, low carb, keto, the list goes on. Because we have a thermo cooker, we can mill our seeds and other ingredients up fresh, rather than buying pre-milled ingredients that are often stale at best and rancid at worst.

Method

Preheat the oven to 200C.

Place 20g of the flaxseeds into the TC bowl, mill 30 sec / speed 9. Transfer to a small bowl, add 80g water, stir and set aside.

Without cleaning the TC bowl, add the psyllium husks, mill 1 min / speed 10.

Add the coconut flour, pumpkin seeds, chia seeds, sesame seeds, remaining 30g flaxseeds, coconut sugar, baking powder and salt, mix 10 sec / speed 7. Set aside.

Place the coconut oil in the TC bowl, warm 2 min / 50C / speed 1.

Add the warm water and the set-aside flaxseed mixture, mix 5 sec / speed 3.

Add the set-aside coconut and seed flour, mix 7 sec / speed 6.

With damp hands, smooth and shape the dough into 5 buns, spray with water and sprinkle with extra sesame seeds (if using).

Place on a lined baking tray, ideally lined with a Silicone Baking Mat, and bake for 45 to 50 minutes, or until the rolls are browned on the outside and a soft crust has formed.

To finish

Delicious rolls, ready for your fillings. Split and load them up with your favourite burger or sandwich fillings, or simply toast and butter.

Storage: keep in an airtight container. These buns are naturally gluten free, grain free, dairy free, egg free, nut free, soy free and vegan.
