A silky, creamy purée that does everything mashed potato does, with a fraction of the carbs.

This cauliflower purée is made in the Thermomix in about 25 minutes, serves 4, and uses six simple ingredients. It is gluten free and vegetarian, and it works as a low-carb stand-in anywhere you would normally serve mashed potato or polenta.

This recipe has been a major player in our meal planner for ages, and we are so happy to finally be able to share it with you.

Cauliflower is such a versatile vegetable. It tastes great when cooked the right way, it is plentiful and economical, and it can also be seriously good for you. Use it as a low-carb alternative to mashed potato alongside stews, grilled meats and sautéed vegetables. It is full of flavour, just as creamy as its carborific counterparts, and it makes a perfectly pillowy base for so many meals. Use 1 whole cauliflower, or as much as will fit into the mixing bowl.

Method

Place the cheese in the mixing bowl and grate 5 sec / speed 8. Set aside.

Place the cauliflower and stock in the mixing bowl and cook 15 min / 100°C / speed 1.

Add the butter, cream, Flavour Bomb Salt and grated cheese, then purée 30 sec / speed 9.

To finish

Serve hot with poached eggs, crispy pancetta and a drizzle of truffle oil.

Notes and tips

Use one whole cauliflower, or as much as will fit into the mixing bowl. The purée is very forgiving on quantity, so a slightly larger or smaller head will still work.

Is cauliflower purée actually low carb?

Much lower than mashed potato, yes. That is exactly why we use it: cauliflower brings the carb content of a plate down while still giving you a creamy, pillowy base.

What do I serve it with?

Anywhere you would use mash or polenta. It is excellent under stews, grilled meats and sautéed vegetables, under garlic mushrooms, as a base for our slow cooked beef brisket, or with poached eggs and prosciutto for breakfast.

Is it gluten free and vegetarian?

It is gluten free, vegetarian, soy free and egg free as written. Serving it with pancetta or prosciutto will of course change that, so leave those off if you are cooking for vegetarians.

Do I need a whole cauliflower?

Use a whole head, or as much as will comfortably fit into the mixing bowl. The recipe is forgiving, so do not stress about hitting an exact weight.
