Thermomix Super-Fibre Porridge Recipe (No Oats!)

I promise you will feel GREAT after eating starting your day with this!! And it’s gluten free, grain free, dairy free and can even be made low carb and keto! You’ll feel super full and satisfied, so you can focus on everything you’ve got to get done, but you’ll also be moving all the crap out of your system (literally!!). Our whole family travels with a container of this, so no matter where we are and what we’ll be indulging in later on, we’ve started the day wholesomely (and the digestion stays tip-top!). This recipe makes a big batch, but feel free to simply make half (follow the same steps). However, if you’re going to be consuming daily it’s easiest just to go the whole hog and store in a jar in the fridge to keep it fresh. Enjoy, hope you love it as much as me! x

P.S. the secret to making this recipe ‘porridgy’ and super high in fibre without oats the is the psyllium husks - so don’t skip out on these! You can find them in health food stores or the health-food aisle of the supermarket, along with other dry ingredients such as flours, nuts and seeds.

For a low carb, keto option, leave out the sweetener (or use xylitol) and use coconut flakes instead of the dried fruit. Ingredients

1 cinnamon stick
80g coconut sugar, xylitol or other granulated sweeteners (optional)
¼ tsp salt
250g raw almonds
100g hazelnuts
80g sunflower seeds
80g flaxseeds
80g sesame seeds
50g psyllium husks
50g chia seeds
100g desiccated coconut
100g sultanas, dried blueberries, dried mulberries, dried cranberries, sour cherries etc. (optional)

Method

  1. Place cinnamon, sweetener and salt in TC bowl, mill for 10 seconds, speed 10.
  2. Add almonds, hazelnuts, sunflower seeds, flaxseeds and sesame seeds, mill for 10 seconds, speed 8.
  3. Add psyllium husks, chia seeds, desiccated coconut and dried fruit, mix for 10 seconds, speed 4.

Store in a glass jar or container in the fridge for up to a month.

To serve, mix half a cup of dry mixture with enough boiling water to make a wet porridge. Allow to stand for 5 minutes to thicken (it will thicken a lot!). After this time you can add more water if necessary to thin out. Top with yoghurt, coconut yoghurt, cream, milk, fresh fruit, fruit compote etc. Enjoy!
