The fluffy shaved ice melts on your tongue, perfectly balancing the sweet strawberry purée beneath. While we adore the classic strawberry version, you can switch things up with any frozen fruit you have on hand - mango is a close second!

Paired with the WunderCentix Axis, it whips up feather-light snow in seconds from frozen water, juice, milk or even leftover smoothies. Ingredients
750g milk
220g sweetened condensed milk
2 tsp vanilla bean paste
750g strawberries, fresh or frozen
225g white sugar
Fresh strawberries, to garnish
Mint leaves, to garnish
Method
In advance:
- Place milk, condensed milk and vanilla into TC bowl. Mix for 10 seconds, speed 6. Allow mixture to sit for 5 minutes.

Divide mixture between the 8 pots from your Ice Shaver kit. Snap lids on and place in the freezer for a minimum of 24 hours.
- Meanwhile, in a clean TC bowl, place strawberries and sugar. Pulverise for 8 seconds, speed 10.
- Cook for 16 minutes, steaming temperature, speed 1. Transfer to an airtight container or glass jar and refrigerate until ready to serve.
To serve:
- Insert your WunderCentix Axis into your Thermomix.
- Spoon approximately 1/3 cup strawberry puree into cocktail glasses or small serving bowls.
- Remove a frozen milk disk from its mould — running under warm water makes this easier. Insert disk into Ice Shaver Attachment and fit onto WunderCentrix Axis for Thermomix.
- Position serving glass or bowl under Ice Shaver. Set Thermomix to reverse speed 3 — milk ice will instantly begin flaking into your glass; ensure to catch it. Use 1 milk disk per serve.

Once the milk disk has been fully shaved, stop the Thermomix. Decorate shaved ice with fresh strawberries and mint leaves. Serve immediately, as the delicate flakes will begin to melt and lose their texture.
- Insert a new milk disk into your Ice Shaver (if any of the previous disk remains, leave it in the chamber). Again, run on reverse speed 3 and flake into a serving glass or bowl. Decorate and serve. Repeat with remaining milk disks for additional serves.
