Ingredients
160g potato flour
100g rice flour + extra for dusting (purchased, not homemade)
60g cornflour (ensure gluten free)
2 tsp xanthan gum
1.5 tsp fine salt
4 free-range eggs
2 tsp water
1 tbsp olive oil
Method
- Place potato flour, rice flour, cornflour, xanthan gum and salt in TC bowl, sift for 10 seconds, speed 6.
- Add eggs, water and oil, mix for 5 seconds, speed 5.
- Knead for 1 minute, dough function.
- Squeeze a small piece of dough and see if it comes together. If it doesn’t, or if the dough looks dry rather than luscious, add 1 teaspoon of water and continue to knead for 30 seconds, dough function. Repeat until dough is smooth and luscious, but not sticky.
- Shape dough into a ball and wrap in cling film or a fibreglass-free silicone baking mat. Rest for 20 minutes.
- If using our Pasta Attachment, insert the WunderCentix Axis into your Thermomix bowl. Attach the pasta roller and run your machine on reverse speed 3 (if you need help with this step, watch this video).
- Cut dough into 6 equal pieces, a dough cutter makes this easiest. Flatten each piece and flour both sides - this may be easiest with a quick roll of the rolling pin. Set pasta machine to the widest setting (if using our pasta roller that's setting 8) and feed through dough. Fold in half and repeat. Continue feeding dough through the widest setting (folding in half each time) until dough becomes silky and is uniform in shape (approximately 6 times).
- Once silky, turn the machine to one setting narrower (on our roller, that's setting 7) and feed dough through once. Turn one setting narrower again and feed through once on setting 6. Repeat on setting 5 and, finally, setting 4. Flour both sides of dough if starting to stick to the machine. Repeat with remaining dough.
- Cut pasta into desired shape, or leave as is and use for lasagne, ravioli, tortellini or cannelloni. If you've got our Pasta Set, you can insert one of the cutter attachments into your WunderCentix Axis - either the wider, fettuccine cutter, or the thinner, angel hair cutter, and run your sheets through (you can see this in the above video).
When ready to serve, cook pasta in salted boiling water until al dente. Fresh pasta will only take a couple of minutes to cook, so stay with it!
