Fresh Thermomix Pasta Dough Recipe

Nothing beats the flavour of fresh, homemade pasta with its silky richness, and it’s so easy to make in the Thermomix with no manual kneading required for the dough, and then our Pasta Attachment rolls it out for you! 

The secret to silky smooth pasta is in step 4 of this recipe – so don’t be tempted to skip passing the dough through the widest setting a couple of times. This is easy with an electric pasta roller like ours, no hand cranking or, worse still, rolling pin required. Once you’re confident with the basic recipe, you can experiment by adding finely chopped fresh herbs, lemon zest, garlic powder, spices, charcoal, turmeric, beetroot powder, matcha powder, tomato powder or cracked pepper to the mixture at step 1. Fun!

If you don’t have a pasta machine, you can still make this recipe, although it will be a lot more work. Use a rolling pin to roll the dough out thinly on a floured surface, then use a sharp knife to cut the dough into thick pappardelle, or leave as large sheets.

Ingredients

400g plain flour
4 free-range eggs
1.5 tsp fine salt

Method

  1. Place all ingredients in TM bowl, knead for 2 minutes, interval speed. If dough doesn’t come together, add 1/2 tablespoon of water at a time and continue to knead for 30 seconds, interval speed.
  2. Shape dough into a ball and wrap in cling film or a fibreglass-free silicone baking mat. Rest for 20 minutes.
  3. If using our Pasta Attachment, insert the WunderCentix Axis in your Thermomix bowl. Attach the pasta roller and run your machine on reverse speed 3 (if you need help with this step, watch this video).    
  4. Cut dough into 6 equal pieces, a dough cutter makes this easiest. Flatten each piece and flour both sides. Set pasta machine to the widest setting (if using our pasta roller that's setting 8) and feed through dough. Fold in half and repeat. Continue feeding dough through the widest setting (folding in half each time) until dough becomes silky and is uniform in shape (approximately 6 times).
  5. Once silky, turn the machine to one setting narrower and feed dough through once. Turn one setting narrower again and repeat until the dough is desired thickness (for our pasta roller, go down to setting 2). Flour both sides of dough if starting to stick to the machine. Repeat with remaining dough.
  6. Cut pasta into desired shape, or leave as is and use for lasagne, ravioli, tortellini or cannelloni. If you've got our pasta set, you can insert one of the cutter attachments into your WunderCentix Axis - either the wider, fettuccine cutter, or the thinner, angel hair cutter, and run your sheets through (you can see this in the above video). 

When ready to serve, cook pasta in salted boiling water until al dente. Fresh pasta will only take a couple of minutes to cook, so stay with it!
