Super easy, all you’ll need for this meal is your thermo bowl, knife, chopping board and 25 minutes (20 of those you can be of doing something else!). This is speedy, simple and satisfying mid-week fare with a good dose of veggies – bowl food at its best, possibly eaten on the couch

Brown onion, peeled and halved
Olive oil
Carrots, peeled and quartered
Basmati rice, rinsed just prior to cooking
Peas, fresh or frozen
Red capsicum, diced
Stock concentrate
Ground turmeric
Ground cumin
Cucumber, cubed
Flaked almonds, toasted
Mint leaves, finely chopped
