Simple yet tasty, this easy meal requires only fresh veggies and pantry staples. And if you’re really in a pinch, you can replace the fresh veggies with frozen ones!

Ingredients

Water
Medium grain rice
Brown onions, peeled and halved
Garlic cloves, peeled
Olive oil
Raw cashews
Stock concentrate
Dijon mustard
Nutritional yeast flakes
Fine salt
Vegetables, diced – Carrot, Zucchini, Peas,
Corn, Cauliflower, Broccoli, Capsicum, Spring onions
Can beans, Rinsed – Chickpeas, Kidney beans
