Rough Puff Tart in the Thermomix

This is such an easy recipe to cook, and the result is really quite impressive! I use a fry pan to create the tart shell, so there’s no need to go out and invest (and store!) fancy equipment. You’ll have the whole thing finished and on the table in less than 30 minutes, and any leftovers are delicious cold in lunchboxes.

Serves 6

Ingredients

Butter puff pastry
Ready-to-eat vegetables
– Grilled zucchini, Roasted Pumpkin, Grilled eggplant,
Roasted potatoes, Tomatoes, Spinach, Grilled asparagus,
Roasted onion, Kale, Spring onions, Grated carrot,
Sautéed mushrooms, Steamed broccoli
Can beans, drained (optional)
– Chickpeas, Kidney beans, 4 bean mix
Cheese, roughly chopped (optional)
– Parmesan, Cheddar, Tasty, Feta
Free-range eggs
Cream (any type is fine)
Salt – flavour bomb paste (see page 63),
Mushroom salt or Fine salt
Garnishes – Crumbled or Grated cheese, Parsley,
dill, Sprouts, Pine nuts, Chilli flakes
