I cannot get enough of jams, chutneys and relishes – not only are they a great way to extend the life of seasonal produce, but they fit so perfectly with my ‘favour makers’ philosophy – always have things on hand to jazz up simple dishes. This one really is too easy to whip up, and incredibly cheap!

Makes 800ml

Brown onions, peeled and quartered
White or apple cider vinegar
Raw sugar
Fine salt
