This is the ultimate sweet recipe to add to your repertoire; it’s incredibly easy to make and so versatile. It’s the filling for our Easy Peasy Chocolate Tart (p. 130), and the icing on our Chocolate Mud Cake (p. 134), but the uses don’t end there – pour over ice cream for a hot fudge sundae, use as a dipping sauce for churros, spread as a filling for layer cakes and roll to make chocolate truffles. The secret lies in the temperature – when hot it’s smooth, pourable and saucy, at room temperature it’s thick and spreadable, and chilled it’s firm and holds its shape.
