This beetroot smoothie is made in the Thermomix in about 2 minutes with seven ingredients, and the recipe serves 2.
Raw beetroot, celery, cucumber and a handful of whatever greens are in the fridge, blended with frozen banana and frozen berries until it is thick, cold and a startling deep pink. There is nothing in it but fruit, vegetables and water, and because the whole vegetable goes in you keep all the fibre that a juicer would throw away. Beetroot Smoothie in the Thermomix
Serves 2
Ingredients
Method
Place beetroot, celery, cucumber, banana, berries and greens into TC bowl. Add 50g of water, pulverize for 10 seconds, speed 9.
Set timer for 2 minutes, continue on speed 9, slowly adding the remainder of the water over the MC during the first 40 seconds.
To finish
Serve chilled. Enjoy immediately, or transfer to a bottle to sip throughout the day.
Notes and tips
The frozen banana and frozen berries are what make it thick and cold, so keep a bag of each in the freezer and this becomes a two minute job. Any soft leafy green works, so use whatever needs using up. Adding the water slowly over the MC rather than all at once is what stops it splitting, so do not rush that step.
Questions we get asked
Do I need to cook the beetroot first?
No. It goes in raw, peeled and roughly chopped. Blending it on speed 9 breaks it down completely.
Why a smoothie rather than a juice?
Juicing throws away the pulp, and the pulp is where the fibre is. A smoothie keeps the whole vegetable, so you get the same vitamins and minerals plus the fibre.
Can I make it ahead?
Yes. Transfer it to a bottle and sip it through the day. It is at its best cold and fresh, so keep it chilled.
What can I use instead of berries?
Any frozen fruit will do the same job. The berries are there for sweetness and for the cold, so keep something frozen in the mix or it will come out thin.
