Blueberry Mint Smoothie in the Thermomix

Ingredients

Method

Place flaxseeds in TM bowl, mill for 30 seconds, speed 9.

Add bananas, blueberries, mint, vanilla extract and 50g of water, pulverise for 20 seconds, speed 9.

Set timer for 1 minute, continue on speed 9, slowly adding the remaining water over the MC.

To finish

Drink it immediately, while it is still cold and smooth.

Notes and tips

This is not one to make ahead. Smoothies with flaxseeds do not store well, because the flaxseeds keep absorbing liquid and the smoothie turns thick and lumpy. Try adding 50g of baby spinach for some extra health benefits, and nobody will taste it.

Questions we get asked

Why a smoothie rather than a juice?

Juicing extracts the liquid and leaves the pulp behind, and the pulp is where the fibre is. Fibre is what keeps the digestive system happy, keeps hunger and blood sugar in check, and makes a smoothie filling enough that you are less likely to overeat afterwards. A smoothie gives you the same vitamins, minerals and phytonutrients as a juice, and keeps the fibre too.

Why mill the flaxseeds first?

Whole flaxseeds pass straight through. Milling them for 30 seconds first is what releases the fibre and stops the smoothie being gritty.

Can I make it ahead?

No, and this one really does need drinking straight away. The flaxseeds keep absorbing liquid, so a smoothie left to sit turns thick and lumpy.

Can I sneak some greens in?

Yes. Add 50g of baby spinach with the fruit. The blueberries keep the colour dark and nobody will taste it.
