Thermomix Pink Chia Puddings Recipe

A make-ahead pink chia pudding, packed with protein and fibre to keep you full right through to lunch.

These pink chia puddings are made in the Thermomix in about 10 minutes, set in the fridge overnight, and the recipe serves 4.

I am a big fan of anything that can be made in advance, especially when it comes to breakfast! This one is a favourite of mine, particularly during the week. Make it before bed and enjoy a healthy breakfast on the go in the morning. Chia seeds are full of protein and fibre, so they really keep you full until lunch.

Pink Chia Puddings (for Thermomix)

Serves 4 · Thermomix or thermo cooker · about 10 minutes plus overnight setting

Place raspberries and sugar or xylitol in the mixing bowl, pulverise 10 sec / speed 9.

Add coconut milk, mix 5 sec / speed 6.

Add chia seeds, mix 5 sec / reverse speed 4.

Divide the coconut mixture among 4 jars or bowls. Sprinkle with toppings and refrigerate overnight.

To finish

Enjoy straight out of the jar or bowl in the morning, no fuss and no cooking before your coffee.

Variation: Replace the raspberries with mango or banana for a tropical twist.
