I just love the crispy-creamy-salty-sweet combination of fried kale, feta and peas, plus a little zing from the fresh herbs. You will be surprised by how many vegetables I’ve crammed into these fritters – they definitely don’t taste healthy! Kale is so densely nutritious and easy to grow year-round, so I’m thrilled to have a new way to cook with it. This recipe is probably weekend fare as it takes a little more time than most of my breakfasts, but the fritters are still super easy and any leftovers are great cold in lunchboxes.

Frozen peas, defrosted

Buttermilk or Milk
