This was the first recipe that I developed for this book, and it’s still one of my favourites. I enjoyed the most delicious vegan quiche at one of my favourite cafes and knew right away that I had to be able to make it at home. I have played around with these ingredients to ensure it’s not only the perfect quiche taste, but also the perfect consistency and texture – this bad boy holds its shape when sliced. Use this recipe to get rid of any veggies you have hiding in the fridge – in line with our ‘waste not’ philosophy, this isn’t about prescriptive recipes, it’s about what you like and what you have on hand.
