Here we’re allowing the natural beauty of the mango to shine by lightly cooking it into a chunky coulis – perfect for flavouring yoghurt (page 177), topping cheesecakes (page 136), ice cream, custard, panna cotta, granola, fruit salad ... you name it. It couldn’t be easier to do, and the cherry on top is that you don’t even need to wash the slow cooker after – we both cook and store the coulis in glass jars. Pretty nifty if I do say so myself. Make the most of mangoes while they’re plentiful in the warmer months and load up the freezer to add a touch of the tropics to your winter.
