Spanakopita Cigars in the Thermomix

I will admit this recipe is a little fiddlier than most of mine, but I really think the result is worth it – every time I eat one I am pleasantly surprised, which says a lot as I am always my own harshest critic! They’re also delicious cold, so I relish any leftovers. While pastry may not have been the obvious choice for the ‘fresh and light’ section, the filo really does give a lightness and the dill a freshness – you might be surprised too.

Serves 4

Ingredients

Spinach leaves
Spring onions, ends trimmed and halved
Red Asian shallots, peeled
Leek, white part only, quartered
Olive oil
Fresh dill
Greek feta, roughly crumbled
Free-range eggs
Salt
Sheets filo pastry
Melted butter
Sesame seeds (optional)
