This soup is a really handy addition to my quick-fix repertoire, and despite its simplicity it is bursting with flavour, thanks to the curry paste. While I usually find homemade pastes far superior to what you can find in a jar at the supermarket, at a pinch I would happily turn to the latter. Zucchinis are plentiful right throughout spring, summer and autumn, and, in my experience anyway, are the easiest vegetable to grow – so why don’t you pop a seedling in this spring?
