Mussels are one of the most sustainable seafood choices, are incredibly cheap to buy and cook in no time at all, making them a favourite choice for weeknight meals.

Ingredients

Shallots, peeled
Garlic cloves, peeled
Knob ginger, peeled
Stalk lemongrass, white part only
Large green chillies, deseeded and halved
Coriander roots
Coconut sugar
Stock concentrate
Water
Coconut oil
Coconut milk
Mussels, scrubbed and debearded
Steamed rice
Fresh coriander, leaves only
Lime, juice only
