These miso butter noodles are made in one saucepan on the stovetop in about 15 minutes, and the recipe makes 3 serves.

This dish is super tasty: rich and luxurious thanks to the butter and miso, but also fresh and light thanks to the rocket and spring onions. It is a winning combination! It literally takes only 15 minutes to pull together, faster than you could get delivery (and a whole lot cheaper and healthier). No special equipment required, just one saucepan and a big bowl.

The thing that takes this bowl from good to crave-worthy is the savoury, rounded, deeply moreish backbone running through the miso butter. Method

Cook noodles according to packet instructions. During the last 1 minute, add the frozen peas. Drain and set aside in a large bowl.

Meanwhile, place water, butter, miso paste and No-Chicken Chicken Salt in a small saucepan over low heat. Warm until the butter is melted, but do not let the mixture boil. Whisk until the miso paste is combined and the mixture is smooth.

Pour the miso mixture over the noodles and peas, add the spring onions and rocket, and toss everything to combine.

To finish

Sprinkle with shichimi togarashi and serve. Delicious warm or chilled!
