These vegan miso butter noodles are made in the Thermomix in about 15 minutes, and the recipe makes 3 serves.
This dish is super tasty: rich and luxurious thanks to the butter and miso, but also fresh and light thanks to the rocket and spring onions. It is a winning combination! It literally takes only 15 minutes to pull together, faster than you could get delivery (and a whole lot cheaper and healthier).
The thing that takes this bowl from good to crave-worthy is the savoury, rounded, deeply moreish backbone running through the miso butter. That is my No-Chicken Chicken Salt doing the heavy lifting: an organic, plant-based seasoning with all the comforting savouriness of chicken salt and absolutely none of the nasties. One teaspoon is all it takes.

15-Minute Miso Noodles (for Thermomix)
Makes 3 · Thermomix or thermo cooker · about 15 minutes
Ingredients
*Shichimi togarashi is a Japanese spice blend of chilli flakes, seaweed, sesame seeds and more, adding a spicy umami kick. Buy it premade from spice shops, or make your own.

Cook noodles according to packet instructions. During the last 1 minute, add the frozen peas. Drain and set aside in a large bowl.
Meanwhile, place water, butter, miso paste and No-Chicken Chicken Salt in the TC bowl. Warm 5 min / 80°C / speed 3.
Pour the miso mixture over the noodles and peas, add the spring onions and rocket, and toss everything to combine.
To finish
Sprinkle with shichimi togarashi and serve. Delicious warm or chilled!
