Spoon one end, spatula the other. Folds the spinach and cashews through and scrapes the bowl clean.

Method

Place the cashews in the TC bowl, mill 10 sec / speed 10. Set aside.

Without cleaning the TC bowl, place the onion, garlic and ginger, chop 5 sec / speed 5. Scrape down the sides.

Add the coconut oil and curry powder, sauté 6 min / 100C / speed 1.

Add the tomatoes, coconut milk, salt and cauliflower, cook 15 min / Varoma / reverse speed soft, MC removed and steamer basket on top to prevent splashes.

Add the spinach and milled cashews, combine with the Thermo Spoon Spatula and allow to stand in the TC bowl, covered, for 5 minutes.

To serve

Serve with rice and fresh coriander leaves. It reheats beautifully, so it is a great one to make ahead for busy weeknights.

Variation: serve with a spoonful of yoghurt and a drizzle of pomegranate molasses (this variation is not dairy free or vegan).
