Thermomix Pina Colada Ice Creams Recipe

These naughty-but-nice treats are a novel variation on the classic cocktail, while also keeping you cool in the summer heat. Simply whip up the mixture in the Thermomix and freeze for a minimum of 6 hours in one of our many super-cute non-stick silicone ice cream moulds!

Makes 12

400g pineapple, roughly chopped
1 lime, juice only
200g coconut cream
250g cream
350g condensed milk
100g Malibu™ rum
3 x sets of silicone ice cream moulds, to set


  1. Place pineapple and lime juice in TM bowl, puree for 30 seconds, speed 9.
  2. Add coconut cream, cream, condensed milk and Malibu™ rum, beat for 1 minute, speed 4. Insert sticks into 12 silicone ice cream moulds, then pour mixture evenly between. Freeze for 2 hours.

Remove from moulds and enjoy! You can also remove from moulds and store in an airtight container in the freezer ready to grab as needed (and freeing up your moulds!).
