A classic sticky date pudding made gloriously easy: whip up the batter, pour into dariole moulds and steam, with the mat as a clever no-drip lid.
Such a classic dessert, made so easy in the Thermomix. Whip up the batter in the bowl, pour into our non-stick silicone dariole moulds and steam in the Varoma. Delicious hot or cold, it's hard to find someone who doesn't love a sticky date pudding. We've kept the eggs, dairy and nuts out, so it suits a range of eating preferences and lunchboxes, with no loss of quality.
The clever trick here is our Silicone Steaming Mat for Varoma: flip it upside down and lay it over the moulds to stop condensation dripping into your puddings. It's just one of the mat's many brilliant uses.

Sticky Date Puddings (for Thermomix)
Makes 8 individual puddings · Thermomix or thermo cooker

Method
Place flaxseeds in TC bowl, mill 10 sec / speed 10. Scrape down the sides.
Add dates and water, cook 4 min / 100°C / speed 1.
Add bicarb soda, chop 4 sec / speed 4. Wait 5 minutes.
Add the flour, baking powder, oil, mixed spice and brown sugar. Mix 5 sec / speed 3. Fold in any loose flour with a spatula.
Grease 8 silicone dariole moulds with oil. Divide the date mixture evenly between the moulds. Bang the moulds on the benchtop to release air bubbles and flatten the mixture.
Fill TC bowl with 700g water. Place the steaming tray in position and fill with the dariole moulds. Turn the Silicone Steaming Mat upside down and lay it over the moulds to stop condensation dripping in. Place the steaming tray lid in position.
Steam 30 min / steaming temperature / speed 3.
Wait 10 minutes, then invert the moulds over plates and gently squeeze the sides to release the puddings.
To serve
For a warm pudding serve immediately, or store in an airtight container in the fridge for up to five days (just as good cold). We love these drizzled with a coconut caramel or quick toffee sauce.
