Method

Preheat the oven to 210°C.

Insert the butterfly in TC bowl. Add the milk, flour, eggs and salt. Mix 10 sec / speed 3, MC removed.

Scrape down the sides with a Thermo Spoon Spatula. Mix a further 10 sec / speed 3, MC removed. Ideally, stand the batter for 30 minutes.

Add 1 tsp lard or oil to each of 8 silicone dariole moulds. Sit them in a roasting pan or on an oven tray, then place in the hot oven until the fat is hot and bubbling, about 5 minutes.

Quickly pour the batter into the moulds, return to the oven and bake 15 to 20 minutes, until puffed and golden. Do not open the oven during cooking. Serve immediately.

To serve

Serve immediately, piping hot, alongside a roast dinner, a curry, or a weekend breakfast fry-up. Yorkshire puddings are always best straight from the oven.
