My mum has been crafting this recipe for years, intent on a fresher take on the classic by not pre-cooking the filling. The result is decadent without being overly sweet or heavy, allowing the apples to really shine. There are a few more steps than most of my recipes, but the thermo cooker does save you significant time over the conventional method – and homemade pastry is the best!

Ingredients
Plain flour, plus extra for dusting
Raw sugar, plus extra for sprinkling
Fine salt
Cold butter, cut into 2cm cubes
Chilled water
Lemon, rind and juice
Cornflour
Granny Smith apples peeled, cored and quartered
Ground cinnamon
Sultanas
Free-range egg, lightly beaten
