This refreshing salad incorporates so many beautiful flavours and textures – it stands as a meal on its own, but can also be served as an accompaniment to dishes such as Eggplant Tagine (p. 106) or Punchy Couscous Salad (p. 108). I have separated the sesame dressing ingredients so you can easily use that recipe on other salads, or drizzle on roasted vegetables for a creamy dressing.
