Here is the simplest trick I know for eating more vegetables: put a good dressing on them. It is the difference between a sad bowl of plain leaves and a side everyone comes back for. Whether you are feeding yourself or trying to get the kids to eat their greens, the right dressing turns “I should eat this” into “I actually want to eat this”.
The catch is that a dressing only helps if it is already made and waiting in the fridge. Making one from scratch on a tired weeknight is the step that quietly never happens, so the meal ends up bland or you reach for something else. Make your dressing ahead on the weekend, and a delicious dinner is only minutes away.
A purchased dressing is never as good as a homemade one (and don't get me started on the added ingredients).
