Thermomix Dressings · How To

The simplest way to eat more veg? Keep a good dressing on hand, made in minutes in your Thermomix.

Here is the simplest trick I know for eating more vegetables: put a good dressing on them. It is the difference between a sad bowl of plain leaves and a side everyone comes back for. Whether you are feeding yourself or trying to get the kids to eat their greens, the right dressing turns “I should eat this” into “I actually want to eat this”.

The catch is that a dressing only helps if it is already made and waiting in the fridge. Making one from scratch on a tired weeknight is the step that quietly never happens, so the meal ends up bland or you reach for something else. Make your dressing ahead on the weekend, and a delicious dinner is only minutes away.

A purchased dressing is never as good as a homemade one (and don't get me started on the added ingredients). The good news is your Thermomix whips up a big batch in seconds, so a jar of something brilliant is always within reach. Here are the dressings I keep on rotation, and the cookbooks they live in.

Make-Ahead

How long do homemade dressings keep?

🥤

Oil, vinegar & mustard

No dairy or egg, so these keep for weeks, even months, sealed in the fridge. Your everyday workhorses.

🥐

Tahini based

All the creaminess of a dairy dressing, but it keeps far longer. The clever middle ground.

🥛

Creamy & dairy

The most delicious and the most fragile. Make these when you will use them within a few days.

Best-ever salad dressing

Best-ever salad dressing

Olive oil, vinegar and Australian mustard, shaken into a deli-worthy staple. My favourite, it keeps almost indefinitely and goes on everything, not just salad.

Zingy mustard dressing

Zingy mustard dressing

Tangy, creamy and sweet, with no dairy or egg, so you can make a big batch and call on it for months. Lovely tossed through veg before roasting, too.

Sesame and tahini dressing

Sesame and tahini dressing

Creamy with a nutty, savoury edge and no dairy, so it keeps beautifully. From my soba noodle salad, but brilliant over roast veg and grain bowls.

Miso dressing

Miso dressing

Deep, savoury and umami, it makes even plain steamed greens taste like a restaurant side. From my spring salad.

Creamy ranch dressing

Creamy ranch dressing

The crowd-pleaser. Smother plain leaves in ranch and everyone is back for seconds. A dairy dressing, so make it fresh and enjoy within a few days.

Vietnamese-style dressing

Vietnamese-style dressing

Fresh, herby and bright, with that classic balance of sweet, sour and a little heat. It brings my Vietnamese trout salad to life and lifts any crunchy salad.

Watermelon salad with balsamic reduction

Bonus: a simple balsamic reduction

Not a dressing exactly, but a drizzle over roast veg, tomatoes or a watermelon and feta salad levels up almost any savoury dish, adding flavour and a little fancy. You will find one in Quick Fix: Every Occasion.
