Smooth or crunchy peanut butter from a single ingredient, no nasties and next to no waste, all in a few minutes.
This DIY peanut butter is made in the Thermomix in about 10 minutes from a single ingredient, and the recipe makes 1 jar.
This peanut butter recipe is super easy and super delicious. All you need is roasted peanuts to create the perfect spread without the nasties and with little waste, especially when your peanuts are purchased from a good health food shop that packages in compostable packaging. Win!
Optional ingredients can be added for a hint of sweet or saltiness, such as sugar (my pick is coconut sugar), as well as a pinch of salt flakes. These can be added in with the peanuts before you begin to blend. If you have unroasted peanuts you can roast them in the oven and then blend, just make sure they are completely cool before using. DIY Peanut Butter (for Thermomix)
Makes 1 jar · Thermomix or thermo cooker · about 10 minutes
Ingredients
Optional add-ins for a hint of sweet or salt: sugar (coconut sugar is my pick) and a pinch of salt flakes, added in with the peanuts before you begin to blend.

Method for crunchy peanut butter
Place 100g peanuts into dry TC bowl. Pulse for 0.5 second, turbo speed. Set aside.
Place remaining 500g of peanuts to TC bowl, blend for 2 minutes, speed 9.
Scrape down sides and base with a Thermo Spoon Spatula. Continue to blend for 1 minute, speed 9, or until desired texture is reached.
Add set aside crushed peanuts and mix for 10 seconds, reverse speed 3.
Method for smooth peanut butter
Place peanuts into dry TC bowl, blend for 2 minutes, speed 9.
Scrape down sides and base with a Thermo Spoon Spatula. Continue to blend for 1 minute, speed 9, or until desired texture is reached.
To store
Place in a jar or airtight container and store for up to 6 months.
Note: Recipe will not work if halved or quartered. You really need a large quantity to get the perfect consistency.
