A rich, silky chocolate mousse from just three ingredients, high in protein and low in carbs.

This rich and silky dessert or snack is made with just three simple ingredients, silken tofu, chocolate buttons and maple syrup, blended to perfection in the Thermomix. There is a bit of an art to getting it perfectly smooth and creamy, lucky I have mastered it, so all you have got to do is follow the recipe!

With a generous dose of protein from the tofu and minimal carbs, this one is ideal for anyone following a low-carb or ketogenic lifestyle, or just wanting more satisfying snacks. I love setting mine in little pots so I can grab one when the 3pm slump hits, without the sugar rollercoaster. And trust me, do not tell anyone there is tofu in it and they truly will never know!

Method

Place the chocolate in the mixing bowl, melt 3 min / 60C / speed 3. Scrape down the sides with a Thermo Spoon Spatula (the best spatula for this!).

Melt a further 1 min / 60C / speed 1.

Add the tofu and maple syrup (if using), blend 1 min / 60C / speed 6. Scrape down the sides.

Blend a further 1 min / 60C / speed 6.

To finish

Pour into individual ramekins or Mini Silicone Pots and refrigerate for a minimum of 1 hour before serving. Store in the fridge for up to five days, perfect for grabbing when the afternoon slump hits.

Note: This recipe can be halved, simply decrease the quantities and follow the exact same steps.
